    Wash and dry all produce. Adjust oven racks to middle and top positions. Preheat oven to 450 degrees. Cut potatoes into ½-inch-th wedges. Toss potatoes on a baking sheet with fry seasoning and 4 tsp of vegetable oil . Season with salt and pepper .

    Roast potatoes on the middle rack until browned and crisp, about ⏱️ 25 minutes , tossing halfway through. On a second baking sheet , toss broccoli florets , a large drizzle of oil, and a pinch of salt and pepper. Roast on the top rack until tender and crisp, about ⏱️ 15 minutes .

    Finely chop dill until you have 1 TBSP. Cut persian cucumber into thin spears. Mince a few spears until you have 3 TBSP of minced cucumber; place in a small bowl .

    Add mayonnaise to the bowl with the minced cucumber and stir to combine. Season with salt, pepper, and up to 2 tsp of white wine vinegar . Reserve 4 tsp of the mixture for brushing the fish. In a medium bowl , add the remaining cucumber spears, sugar , and the remaining vinegar. Season with salt and pepper.

    Microwave butter in a separate small bowl on high heat, about ⏱️ 20 seconds . Stir in panko breadcrumbs and the remaining dill. Season with salt and pepper. Once broccoli is done, remove it from the baking sheet. Pat catfish dry with a paper towel , then place on a baking sheet.

    Brush 1 tsp of reserved sauce onto the top of each catfish fillet. Press the panko mixture onto the sauce to adhere. Bake in the oven until just opaque, about ⏱️ 5 minutes . Heat broiler to high, then transfer the sheet to the broiler. Broil until the crust is golden brown, about ⏱️ 2-3 minutes . Divide between plates and serve with broccoli, potatoes, pickles, and sauce.
